Ingredients
- 1-1/2 c. warm water, or the water you cooked the potatoes in
- 2/3 c. sugar
- 1-1/2 tsp. salt
- 1 cake or 1 Tbsp. yeast + warm water to soften
- 2 tsp. sugar
- 2 eggs
- 2/3 c. soft shortening
- 1 c. mashed potatoes
- 7 to 7-1/2 c. flour
Directions

1Soften yeast in some warm water with 2 tsp. sugar.

2Combine the warm water/potato water with the sugar and salt.

3Add the yeast mixture, eggs and shortening.

4Add the warm mashed potatoes and 7 c. flour.

5Knead until smooth, adding more flour as/if needed.

6At this point, the dough may be refrigerated if you're not ready to continue with making the rolls.

7When ready to bake, form rolls and let rise until doubled in size.

8Bake at 400° for 12-15 minutes.
