Mashed Potato Rolls

Ingredients

  • 1-1/2 c. warm water, or the water you cooked the potatoes in
  • 2/3 c. sugar
  • 1-1/2 tsp. salt
  • 1 cake or 1 Tbsp. yeast + warm water to soften
  • 2 tsp. sugar
  • 2 eggs
  • 2/3 c. soft shortening
  • 1 c. mashed potatoes
  • 7 to 7-1/2 c. flour

Directions

    Soften yeast in some warm water with 2 tsp. sugar.

    Combine the warm water/potato water with the sugar and salt.

    Add the yeast mixture, eggs and shortening.

    Add the warm mashed potatoes and 7 c. flour.

    Knead until smooth, adding more flour as/if needed.

    At this point, the dough may be refrigerated if you're not ready to continue with making the rolls.

    When ready to bake, form rolls and let rise until doubled in size.

    Bake at 400° for 12-15 minutes.
