Mashed Potato Surprise

  • 1 pound Red Potatoes
  • 1/2 cups Chopped Green Onions
  • 4 ounces, weight Cheddar Cheese
  • 1 can (5 Oz. Size) Evaporated Milk
  • 2 Tablespoons Butter
  • Salt And Pepper

Directions

    Place red potatoes in a large pot and cover with water. Bring to a boil, lower temperature to medium, and simmer for about 15-20 minutes until done.

    While potatoes are cooking, chop you onions and cube your cheese. Set them aside. Heat the evaporated milk in the microwave.

    Place butter and milk into a mixing bowl. Once potatoes are done, drain them and add to the mixing bowl. Mash the potatoes with a potato masher, then use a handheld mixer to whip them with the milk and butter until creamy. Add salt and pepper to taste.

    Fold in the cheese cubes and half of the chopped green onions. Once the cheese and onions are folded in, transfer to a serving bowl and top with remaining green onions.
