- 2 1/2 lb. potatoes, peeled and cubed
- 1/2 c. sour cream
- 1/4 c. milk
- 1 1/2 Tbsp. butter or margarine
- salt and pepper to taste
- 1 1/2 c. shredded Cheddar cheese
- 1/4 lb. sliced bacon, cooked and crumbled
- 3 sliced green onions
Directions

1Put potatoes in a pot; cover with water and bring to a boil. Reduce heat, cover and let simmer until tender.

2Drain and place in a mixing bowl.

3Add sour cream, milk, butter, salt and pepper. Beat until light and fluffy.

4Blend in 2 cups cheese, bacon and onions.

5Put potatoes in a greased baking dish; top with remaining cheese.

6Bake in 350° oven for 25 to 30 minutes, until cheese is melted and potatoes are heated through.
