- 1 Sweet Potato
- 1 teaspoon Olive Oil
- 3 dashes Salt
- 3 dashes Pepper
- 1 Pie Crust
- 1 cup Corn Kernels
- 7 whole Eggs
- 1- 1/4 cup Coconut Milk
- 2 Tablespoons Or 3 Massman Curry Paste
- 1/2 cups Swiss Cheese
- 1 cup Frozen Peas
Directions

1Preheat oven to 400 degrees F. Peel the sweet potato and cut it into bite-sized pieces, 1/2 inch to 1 inch wide.

2Toss with the olive oil, salt, and pepper.

3Spread on a baking sheet, and bake for 15 minutes, until soft.

4Roll out your crust and place it in a pie pan.

5Pre-bake the crust for about 10 minutes.

6Blend the corn, eggs, coconut milk, and curry paste (2 tablespoons for less spicy; 3 for more spicy) in a food processor until the corn is totally pulverized.

7Stir the cheese into the milk and corn mixture, and pour it into the pie crust.

8Sprinkle the sweet potato chunks and peas (frozen or thawed; it makes no difference) on top of the soupy mixture in the pie pan.

9Stir the liquid a bit so that somebut not allof the vegetables are submerged.

10Bake for 35 to 40 minutes, until the quiche is firm.
