  • 2 c. self-rising flour
  • 1/4 c. plus 2 Tbsp. mayonnaise
  • 1/2 tsp. yellow cornmeal
  • 1 c. milk
  • 2 Tbsp. vegetable oil

Directions

    Combine flour, milk and mayonnaise, stirring just until dry ingredients are moistened.

    Grease a 10-inch cast-iron skillet with oil.

    Place in a 400° oven for 4 minutes, or until hot. Remove from oven; sprinkle with cornmeal.

    Spoon batter into skillet.

    Bake at 400° for 25 minutes.
