Meat Casserole (Beef)

  • 1 large onion
  • 1 green pepper (medium)
  • 2 Tbsp. butter or margarine
  • 1/2 c. water
  • dash of pepper
  • 3 stalks celery
  • 1 lb. ground beef (lean)
  • 1 can mushroom soup
  • 1/2 tsp. salt
  • 1 can chow mein noodles

Directions

    Preheat oven at 325°.

    Cut onions, celery and pepper coarsely, cook beef in 1 tablespoon of butter until brown and transfer to casserole.

    Cook vegetables until limp, in remaining butter, stir in mushroom soup and water, salt and pepper and mix with beef. Cover and bake 30 minutes.

    After 30 minutes, remove cover and sprinkle with noodles and bake 10 minutes longer, cut back on onions, if you need to.

    Serves 4.
