  • 1 1/2 lb. lean ground beef
  • 1 egg
  • 3/4 c. bread crumbs (Italian)
  • 1/2 c. finely chopped onion
  • 1 (15 oz.) can tomato sauce
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 c. (8 oz.) Mozzarella cheese, shredded
  • green pepper rings (for garnish)

Directions

    Preheat oven to 350°.

    Combine the beef, egg, bread crumbs, onion, 1/3 cup tomato sauce, salt and pepper; mix well and shape into a flat rectangle, about 10 x 12 inches on a piece of wax paper.

    Sprinkle 1 1/2 cups shredded cheese evenly over meat mixture.

    Starting with shortest end, roll up jelly roll fashion and press ends of roll to seal.

    Bake in a shallow baking pan for 1 hour.

    Drain off excess fat.

    Pour remaining sauce over roll. Garnish with remaining 1/2 cup shredded cheese and green pepper rings.

    Bake an additional 5 minutes.

    Good with sweet peas, creamed potatoes, baked potatoes or just tossed salad.
