  • 1 1/2 lb. ground sirloin beef
  • 1 medium onion, finely chopped or 2 tsp. minced dry onion
  • 1 large egg
  • 1 slice white bread, dipped in water and squeezed
  • 2 Tbsp. chopped parsley
  • 2 c. beef broth

Directions

    Preheat oven to 350°.

    In medium bowl, combine ground beef, egg, bread, parsley, onion, 1/2 teaspoon salt and 1/4 teaspoon pepper.

    Mix well.

    Shape in loaf and place in baking dish.

    Add beef broth.

    Bake uncovered 1 hour, basting frequently.

    Remove from oven and cool.

    Wrap in foil and refrigerate.

    Slice thinly and serve with Dijon mustard.

    Delicious when heated, but I think it is at its best when chilled (thinly sliced and served with mustard).
