Ingredients

  • 1 lb. ground beef
  • 1 (4 oz.) can mushrooms, drained and chopped
  • 1 egg
  • 1/3 c. chopped onion
  • 1/4 c. dry bread crumbs
  • salt and pepper to taste
  • 2 to 3 c. instant mashed potatoes
  • 8 oz. shredded Velveeta or Cheddar cheese
  • 1 tsp. parsley flakes

Directions

    Combine first 6 ingredients.

    Mix lightly, press mixture onto bottom and sides of a 9-inch pie plate.

    Bake at 400° in preheated oven for 15 minutes.

    While meat shell is baking, make up mashed potatoes mixture, mixing in the cheese.

    Remove meat shell from oven and drain off any fat.

    Reduce oven to 350°.

    Fill shell with potatoes and sprinkle top with parsley flakes.

    Return to oven for another 10 minutes.

    Serves 4 to 6.
