- 1 pound Ground Beef
- 1 whole Egg
- 1 whole Shallot, Minced
- 2 Tablespoons Tomato Paste
- 2 Tablespoons Dijon Mustard
- 1 Tablespoon Coconut Flour
- 1/2 teaspoons Celtic Sea Salt
- 1/2 teaspoons Pepper
- 1/4 teaspoons Baking Soda
Directions

1Preheat oven to 350 degrees F.

2In a large bowl, combine ground beef, egg and shallot.

3Mix in tomato paste, mustard, coconut flour, salt, pepper and baking soda.

4Use a 1/4-cup scoop to form meatballs.

5Place meatballs on a parchment lined rimmed baking sheet.

6Bake at 350 degrees F for 25 minutes or until a meat thermometer reads 175 degrees F. Remove from oven.

7Serve with marinara sauce over spaghetti squash noodles or zucchini noodles.
