Ingredients

  • 2 Tbsp. corn oil
  • 1 1/2 c. chopped onion
  • 3 cloves garlic, minced
  • 2 Tbsp. chili powder
  • 1/2 tsp. cumin
  • 1 c. diced carrots
  • 1 green pepper, chopped
  • 2 (14 1/2 to 16 oz.) cans tomatoes, undrained
  • 1 (16 oz.) can chickpeas, drained (garbanzo beans)
  • 1 (15 oz.) can kidney beans, drained
  • 1 (10 oz.) pkg. frozen corn, thawed
  • 1 to 2 pickled jalapeno peppers, chopped

Directions

    Heat oil.

    Add onions, garlic, chili powder and cumin.

    Saute 5 minutes or until tender.

    Add carrots and green peppers; saute 2 minutes.

    Add tomatoes, crushing with spoon.

    Stir in remaining ingredients.

    Bring to a boil.

    Reduce heat.

    Simmer 30 to 35 minutes, covered.

    Can serve with rice, if desired.
