Ingredients
- 2 Tbsp. oil
- 1 1/4 c. chopped onion
- 2 cloves garlic, minced
- 2 Tbsp. chili powder
- 1/4 tsp. oregano
- 1/4 tsp. cumin
- 2 c. diced zucchini
- 1 c. diced carrots
- 2 lb. ripe tomatoes, cut into eighths
- 1 (16 oz.) can chickpeas, drained
- 1 (16 oz.) can kidney beans, drained
Directions

1In a large saucepot, heat vegetables and oil over medium heat. Add onion, garlic, chili powder, basil, oregano and cumin.

2Cook, stirring until onion is tender.

3Add zucchini and carrots, cook stirring 1 or 2 minutes.

4Stir in tomatoes, chickpeas and kidney beans.

5Bring to a boil.

6Reduce heat and simmer 30 minutes to 35 minutes.

7Makes 6 servings.
