Meatloaf Cupcakes

Ingredients
- 1 lb your choice of hamberger meat or minced meat.
- 1/2 cup fresh onion
- 1/2 tbsp chives
- 1 whole large egg
- 1 cup bread crumbs/crackers
- 1/2 House meatloaf mix
- 2 potatoes
- 1 milk - to desired consistancy
- 1 tsp butter or to taste
- 1 cup shredded cheese
Directions

1Preheat oven to 350F and place 3 slices of bread on the rack.

2Wait till bread is dried out.

3Crumble when cool.

4Or buy some from your grocery store xD

5Peel, wash and cut up potatoes while waiting on bread to toast.

6Put on medium heat until soft when poked with a fork.

7Mix all base ingredients into large mixing bowl and mix till every thing is evenly distributed.

8It's best to put small squares of parchment paper into the muffin cups or use paper cupcake cups for easier removal.

9Hold in either with a thin layer of butter.

10Fill cupcake cups with base mixture.

11Your oven should still be at 350.

12Place pan in oven for 15-20 mins.

13If your not using cupcake cups or parchment paper pull out half way through cooking and run a knife around between meatloaf and pan.

14While meatloaf is cooking take water from potatoes and mash with butter and milk to taste.

15Place in a freezer bag and in fridge to let cool so thicker.

16When cool use bag to pipe mashed potatoe mix onto a flat shallow pan into swirls like icing on a cupcake.

17Let set in fridge till needed.

18Pull muffins tin from oven and let cool.

19Place bottoms on same flat shallow pan as the tops removing them as you put the bottoms down and place tops on top.

20Sprinkle with grated cheese of your choosing and bake again on 350 till desired cheese is baked on.

21Serve with beans or carrots on the side.

22Two to a person.

23Double the batch if you want thicker bottoms.

24Add chives or bacon bits to the top as fun sprinkles if desired!
