Mediterrain Fish Stew

Ingredients

  • 2 Tbsp. margarine
  • 1/2 c. frozen small onions
  • 1 garlic clove
  • 1 (16 oz.) can stewed tomatoes
  • 1/2 c. water
  • 2 carrots
  • 3 chicken flavored bouillon cubes
  • 1 bay leaf
  • 2 Tbsp. flour
  • 1 lb. fillet of sole
  • 1 green pepper, cut into small pieces
  • 1 (2 1/2 oz.) can mushrooms
  • dash of pepper

Directions

    Melt butter and cook onions for 2 minutes.

    Press garlic and add to onions.

    Add flour until smooth.

    Add tomatoes, water, carrots, chicken cubes, marjoram leaves, bay leaf and pepper. Cook until carrots are half done.

    Add fish, mushrooms and green pepper.

    Remove bay leaf and cook approximately 5 minutes, until fish flakes.

    Serve over cooked rice.
