- 2 Tbsp olive oil
- 5+ cloves garlic, pressed
- 1 large onion, peeled and chopped
- 1 large sweet pepper (any color), cleaned and chopped
- 1/3 cup pine nuts
- 2/3 cup pitted kalamata olives, coarsely chopped
- 3 cups fresh tomato, coarsely chopped (I like to use halved grape tomatoes, but any will work)
- 1 1/2 Tbsp dried oregano
- 6 chicken legs or thighs, organic and free-range
- Seasalt and ground pepper to taste
