Mediterranean Cod With Tomatoes

- 1/3 lb cod fish fillet, cut in half
- 2 tablespoons honey
- 2 tomatoes, diced
- 1 onion, sliced thin
- 1 red bell pepper, diced
- 1/2 cup low sodium chicken broth
- 2 tablespoons minced basil
- 2 tablespoons minced parsley
- salt
- pepper
Directions

1Slice onion and let sit for 5 minutes to bring out its health promotion properties.

2Combine honey and tomatoes in a mixing bowl.

3Saute onion and bell peppers for 2 minutes.

4Add 1/2 cup chicken (or vegetable) broth, fish fillets and tomato mixture.

5Cover and cook over medium heat for 3-5 minutes or until fish is cooked.
