Mediterranean Phyllo Turnovers

Ingredients

  • 2 c. diced cooked chicken
  • 1/4 c. toasted pine nuts
  • 1/3 c. coarse chopped red bell peppers, vinegar/garlic marinated red peppers or roasted red peppers packed in a jar
  • 3/4 c. crumbled Feta cheese
  • 1 Tbsp. minced parsley
  • 1 tsp. dried oregano
  • 2 garlic cloves, minced
  • salt and pepper to taste
  • 18 sheets frozen phyllo dough, thawed according to package directions
  • 1 c. unsalted butter

    Heat oven to 375°.

    Place chicken in a large nonreactive mixing bowl.

    Add pine nuts, peppers, Feta cheese, parsley, oregano, garlic, salt and pepper.

    Stir to combine, cover and refrigerate while you prepare phyllo.
