  • 1 Tbsp. olive oil
  • 8 boneless pork loin medallions (small oval cutlets)
  • 1 (15 oz.) can chunky tomato sauce (Hunt's garlic and herb)
  • 1 (14 oz.) can hearts of artichoke, drained and quartered (not oil packed)
  • 2 tsp. chopped green olives
  • 1/2 tsp. sugar

Directions

    In large skillet, heat oil over medium-high heat; brown pork on both sides.

    Drain.

    Stir in remaining ingredients and simmer over low heat, uncovered, 10 minutes or until pork is cooked. Serves 4.
