Mediterranean Scallops

Ingredients
- 1 large red pepper
- 2 Tbsp. olive oil
- 1 Tbsp. chopped garlic
- 6 small plum tomatoes, cut in wedges
- 6 large green olives
- 1/4 c. capers
- 1/2 tsp. thyme
- 2 Tbsp. butter
- 1 1/2 lb. scallops
- 1/4 c. chopped basil or parsley
Directions

1Cut pepper in julienne strips. In hot oil, cook garlic briefly.

2Add pepper, tomatoes, olives, capers and thyme.

3Cook 5 minutes.

4Melt butter; add scallops and cook about 3 minutes. Sprinkle lemon juice and basil over and stir briefly.

5Spoon tomato mixture on heated plates with scallops over mixture.

6Serves 4.
