Mediterranean Vegetable Soup

Ingredients

  • 1 small pkg. shaped pasta (rotini, shells or wheels)
  • 16 oz. jar spaghetti sauce with mushrooms
  • 16 oz. can mixed vegetables (corn, green beans, English peas, carrots and potatoes)
  • 3 oz. chopped pepperoni
  • 3 to 4 c. water
  • herbs and spices to taste (oregano, Italian seasoning, minced dried onion, garlic powder, celery salt, pepper, chives, etc.)
  • 1 c. chicken stock (may add more to adjust taste of stock)

Directions

    Cook the pasta. Drain. In large soup pot, combine with remaining ingredients. Simmer to blend flavors and heat through. Serve with garlic bread and a sprinkle of Parmesan cheese.
