  • 8 Egg Whites [room temperature]
  • 1 cup Powdered Sugar
  • 1 teaspoon Vanilla [or peppermint]
  • 1 cup Sugar
  • 1/4 teaspoon Cream of Tartar
  • 1/4 teaspoon Salt

    1. Set oven at 250 degrees.

    2. Mix both sugars with a whisk.

    2. Beat egg whites until foamy. Add cream of tartar and salt.

    3. Beat, adding sugar mix 1 tablespoon at a time.

    4. Add vanilla [or peppermint]. Beat on high speed until stiff peaks form.

    5. Put in pastry bag and squeeze on to parchment lines baking sheets.

    6. Bake 40 - 45 minutes. Leave in oven overnight.
