  • 2/3 cup bitter orange juice
  • 2/3 pound boneless chicken breast
  • 8 corn tortillas
  • 7/8 cup refried beans black
  • lettuce
  • 1 1/4 cups red onion marinated
  • 2 tomatoes sliced into half-moons
  • 1 avocado sliced
  • jalapeno chilies sliced

Directions

    Dilute the achiote paste in bitter orange juice.

    Cover the chicken with this mixture and marinate for 1 hour.

    Sear the chicken. Shred.

    Fill the tortillas with the refried beans by lifting the thin layer of the tortilla.

    Add lettuce, chicken, onion, tomatoes, avocado, and jalapeno chilies.
