1Preheat the oven to 140C/275F/Gas Mark 1

2Grease a tray with greaseproof paper

3Whisk egg whites with electric whisk at top speed

4You know when its ready because you can tip the bowl over your head without the eggs sliding

5Pour in the sugar about a table-spoon at a time, and whisk

6Whisk in the sugar, but not at full speed

7When all the sugar is in give it a final whisk until its glossy and stands up in peaks

8Bake in the oven for 2 hours

9Take the meringues out the oven, and leave them for a few hours to dry out
