- 2 egg whites (at room temperature)
- 1/4 c. each: powdered 10x sugar and superfine granulated sugar
- 1/4 tsp. vanilla extract
- 1/4 tsp. cream of tartar
Directions

1Combine sugars.

2In a large mixing bowl, beat egg whites until foamy.

3Add cream of tartar and beat until soft peaks form.

4Add sugar mixture a tablespoon at a time while beating.

5Continue beating until stiff peaks form.

6Beat in vanilla.

7Put meringue in pastry tube or bag.

8Using a star tip, pipe meringue onto parchment paper on cookie sheet.

9Bake at 200° for 1 1/2 hours.

10Do not open oven door.

11Turn off oven.

12Allow to cool in oven 2 hours.

13Remove and serve.
