- 3 5/8 tablespoons granulated sugar
- 6 tablespoons powdered sugar
Directions

1Preheat oven to 280F.

2Whisk the egg whites until they are stiff, gradually adding the granulated sugar as you whip them. When they have reached the right volume, gradually incorporate the powderd sugar using a spatula.

3To shape meringues use a pastry bag to pipe them onto a silicon mat or parchment paper lined baking tray.

4Bake for 40 minutes then reduce to 210F for 20 minutes.
