Ingredients

  • 1 lb. ground turkey
  • 1 (1 1/4 oz.) pkg. taco seasoning
  • 1/2 c. water
  • 1 (15 oz.) can kidney beans, drained
  • 1 (16 oz.) can Mexican tomatoes
  • 1 (6 1/2 oz.) pkg. yellow corn bread mix
  • 1/4 onion, chopped
  • 1/4 green pepper, chopped
  • 1/4 c. jalapeno pepper, chopped
  • 1/2 c. reduced calorie cheese, grated

    Cook turkey about 5 minutes or until no longer pink.

    Add taco seasonings and water and simmer for 10 minutes.

    Place kidney beans in an 8 x 2-inch casserole.

    Layer cooked turkey on top of beans, then tomatoes.

    In a small bowl, mix corn bread mix, adding water according to package directions, with onion, cheese and peppers. Spread mixture on top of turkey and beans.

    Bake at 350° for 35 to 40 minutes or until corn bread mix is golden brown.
