- 1 lb. ground beef
- 2 stalks celery
- 1 medium onion
- 1 green pepper
- salt, pepper and cumin to taste
- 1 can barbecue beans or red kidney beans, drained
- 2 (8 oz.) cans Hunt's tomato sauce
- 1 can drained hominy
- grated sharp Cheddar cheese
- crushed tortilla chips
Directions

1Brown beef; drain off fat.

2Add celery, onion, pepper and seasonings; cook until almost tender.

3Add beans, tomato sauce and hominy.

4Simmer until thick.

5Put in casserole dish; bake 15 to 20 minutes.

6Top with grated sharp Cheddar cheese and crushed tortilla chips.

7Bake until cheese bubbles.

8Bake at 350° to 375°. Freezes well.
