  • 1 Tablespoon Canola Oil
  • 1/2 whole White Onion, Diced
  • 15-1/2 ounces, weight Canned Black Beans, Drained
  • 15 ounces, weight Canned Corn Niblets, Drained
  • 10 ounces, weight Tomato Sauce, Or Rotel With Tomatoes And Chiles
  • 1 Tablespoon Taco Seasoning Mix
  • Fresh Chopped Cilantro, For Garnish

Directions

    Heat oil in a skillet over medium heat. When hot, add onions and saute until tender. Add black beans, corn, tomato sauce (or Rotel), seasoning mix and stir gently to combine. Cover and cook 7 minutes, stirring occasionally.

    Plate and garnish with fresh cilantro. Works nicely with tacos and burritos.
