Mexican Chicken

  • 2 Tbsp. margarine
  • 1 chicken, cubed
  • 1 large onion
  • 1 can Ro-Tel tomatoes
  • 1 small jar sliced mushrooms
  • salt, pepper and red pepper to taste
  • 1 to 2 c. grated Cheddar cheese
  • 1 can cream of mushroom or chicken soup
  • 1 Tbsp. chili powder
  • 1 medium bag taco chips, crushed

Directions

    Saute onions and mushrooms in butter; add tomatoes.

    Add the chicken, seasonings and can of soup.

    Mix well.

    Layer the meat mixture in a casserole dish with the crushed taco chips and cheese, ending with a layer of cheese.

    Bake at 350° for 20 to 30 minutes or until heated through.

    Serves 6 to 8.
