  • 6 boneless chicken breasts
  • 1/2 onion, diced
  • garlic, diced to taste
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 large pkg. shredded Cheddar cheese
  • 1 large pkg. tostada chips
  • 1 can chopped Ro-Tel tomatoes with green chilies
  • 1 large pkg. Monterey Jack cheese

    Boil chicken. Dice and set aside.

    Saute onion and garlic; set aside.

    Mix soups and Ro-Tel together.

    Add onion, garlic and chicken.

    Mix well.

    Line 9 1/2 x 11-inch pan with chips.

    Next, add chicken mixture.

    Then add a layer of cheeses.

    Continue layering, ending with cheeses.

    Bake 45 minutes at 350°.

    Serve with leftover tostada chips.
