- 1 (3 to 4 lb.) chicken
- 1 medium onion, chopped
- 8 slices cheese
- 3/4 c. crushed corn chips
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 can Ro-Tel
Directions

1Simmer chicken in water until tender.

2Remove from water; cool and remove meat from bones.

3Cut chicken into small pieces; place in a greased 2-quart casserole.

4Layer half of onion, cheese and corn chips over chicken.

5Combine soups and Ro-Tel.

6Spoon half of soup mixture over casserole.

7Repeat layering.

8Bake at 350° for 45 minutes.
