Mexican Chicken Rice

  • 1 fryer, cut up
  • 2 Tbsp. margarine
  • 12 green olives, cut up
  • 1 Tbsp. dried capers
  • 1 onion, sliced
  • 1 green pepper, sliced
  • 1 can diced tomatoes with green chilies
  • 1 tsp. salt
  • pepper to taste
  • 1 c. rice
  • 1 c. water

Directions

    Put chicken, oleo, olives, capers, onion, pepper and tomatoes in large pan.

    Season with salt and pepper.

    Cook until chicken is done.

    Remove chicken from bone.

    Add rice and water. Cover pan and cook until rice is tender.

    Serves 4.
