Mexican Chili Rellenos

  • 8 or 9 mild banana peppers
  • 2 c. (6 oz.) Monterey Jack cheese
  • 1 jar salsa
  • 2 eggs
  • 2 c. milk
  • 1 c. flour

Directions

    Boil peppers until tender. Seed and split peppers down the side. Shred cheese or slice into thin strips.

    Stuff pepper with cheese.

    Roll in flour, then with egg and milk. Brown in hot oil. And then put them in a baking dish and top with salsa and extra cheese.

    Bake for 20 minutes covered at 400°.
