Mexican Corn Bread

Ingredients

  • 2 pkg. corn bread or corn muffin mix (ones that call for about 1/2 cup liquid each)
  • 1 regular can cream-style corn
  • 1 1/2 to 2 lb. ground beef
  • 1 or 2 hot peppers, remove seeds and chop
  • 1/2 green pepper chopped
  • 2 medium onions, chopped
  • 1/2 lb. sharp cheese, shredded

Directions

    Brown beef with peppers and onions in a skillet.

    Mix corn bread according to directions on box.

    Add can of corn.

    Mix together.

    Heat large skillet or iron fry pan, oiled, in a 400° oven until hot.

    Put in meat mixture, then a layer of the cheese and then top off with corn bread mixture.

    Bake as directed on corn bread package.

    Cut into wedges and serve.

    This serves 6 to 8. Good with tossed salad and pinto beans.
