- 2 or 3 jalapeno peppers
- 1 c. milk
- 1/2 c. oil
- 1 tsp. salt
- 1/2 tsp. soda
- 1 c. self-rising corn meal mix
- 1 finely chopped medium onion
- 2 slightly beaten eggs
- 8 oz. shredded mild Cheddar
- 6 to 8 oz. creamed corn
Directions

1Preheat oven to 400°.

2Mix all ingredients together except corn meal.

3When well mixed, add corn meal.

4Pour into greased cast-iron skillet.

5Bake 30 to 35 minutes.
