Mexican Corn Bread

Ingredients

  • 2 eggs
  • 1 c. sour cream
  • 1 c. cream-style corn
  • 2/3 c. salad oil
  • 1 1/2 c. corn meal
  • 3 tsp. baking powder
  • 1 Tbsp. salt
  • 2 green jalapeno peppers, seeds removed and chopped
  • 2 Tbsp. chopped green peppers
  • 1 c. grated Cheddar cheese

Directions

    Mix all ingredients except cheese in order given.

    Pour half of the mixture into hot, well-greased iron skillet.

    Sprinkle half of the cheese over batter. Add remaining corn meal mixture and top with the rest of the cheese.

    Bake at 350° for 1 hour.

    Bread may be sliced and buttered, if so desired.
