Mexican Corn Bread

Ingredients

  • 1 c. yellow corn meal
  • 2 Tbsp. sugar
  • 2 tsp. baking powder
  • 2 eggs, beaten
  • 1/2 c. vegetable oil
  • 1/3 c. onion, chopped
  • 2 Tbsp. green pepper, chopped
  • 1/3 c. flour
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 c. buttermilk
  • 1 (8 3/4 oz.) can creamed corn
  • 2 Tbsp. hot banana peppers, chopped
  • 1/2 c. shredded Cheddar cheese

Directions

    In a mixing bowl, combine corn meal, flour, sugar, salt, baking powder and baking soda.

    In a second bowl, combine remaining ingredients. Add to dry ingredients and stir only enough to moisten.

    Pour into greased 9-inch square baking pan. Bake in a preheated 350° oven for 30 to 35 minutes or until golden brown and tests done.
