  • 1 c. corn meal
  • 1/2 tsp. baking soda
  • 3 Tbsp. flour
  • 1/2 tsp. salt
  • 1 c. milk
  • 1 c. cheese, grated
  • 1/2 c. cooking oil
  • 1 c. onion, chopped
  • 1 can (No. 2) whole kernel corn, drained
  • 2 or 3 jalapeno peppers, chopped
  • 3 eggs

Directions

    Measure all dry ingredients in a small bowl; mix.

    In a larger bowl, mix cheese, onion, jalapenos, corn, eggs, oil and milk.

    Add the dry ingredients and mix well.

    Bake at 450° or until brown and firm.
