- 1 1/2 c. yellow corn meal
- 1 tsp. salt
- 3 eggs, beaten
- 1 can small Ortega chili peppers
- 1/2 c. chopped onions
- 3 tsp. baking powder
- 1 c. buttermilk
- 2/3 c. oil
- 1 c. grated Cheddar cheese
- 1 c. cream-style corn
Directions

1Mix all ingredients except onions and cheese, and pour half of batter in 12-inch iron skillet.

2Sprinkle half of cheese and all chopped onion over batter.

3Then pour rest of batter over onion and cheese.

4Sprinkle remaining cheese over top.

5Bake at 400° until well done, approximately 25 minutes.
