Mexican Corn Bread

Ingredients

  • 1 c. yellow corn meal
  • 1 c. flour
  • 1 Tbsp. baking powder
  • 1 tsp. salt
  • 1 egg
  • 1 c. milk
  • 1 c. cream-style corn
  • 1/4 c. chopped onion
  • 2 Tbsp. chopped green chilies (more if you like)
  • 1/4 c. oleo
  • 1/2 c. shredded Cheddar

Directions

    Combine dry ingredients and mix well.

    Beat egg and milk together; add corn.

    Saute onion and chilies in oleo until tender. Add milk mixture, onion mixture and cheese to dry ingredients. Stir until just mixed; pour into greased 8-inch square pan.

    Bake in 400° oven for 35 to 40 minutes or until toothpick inserted in center comes out clean.
