- 3/4 c. yellow cornmeal
- 1 c. flour
- 1/3 c. sugar
- 3 tsp. baking powder
- 1/2 tsp. salt
- 1 c. milk
- 1 egg, well beaten
- 2 Tbsp. diced green chilies
- 1 c. canned corn
- 1/4 c. grated jalapeno cheese
Directions

1Preheat oven to 425°.

2Pour 1/4 cup cooking oil in large iron skillet and place in oven to heat.

3Mix all dry ingredients in large bowl.

4Add milk and egg and stir.

5Pour in hot oil and stir quickly.

6Add chilies, corn and cheese and mix well.

7Pour into hot skillet and bake 20 minutes.
