  • 3/4 c. yellow cornmeal
  • 1 c. flour
  • 1/3 c. sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. milk
  • 1 egg, well beaten
  • 2 Tbsp. diced green chilies
  • 1 c. canned corn
  • 1/4 c. grated jalapeno cheese

Directions

    Preheat oven to 425°.

    Pour 1/4 cup cooking oil in large iron skillet and place in oven to heat.

    Mix all dry ingredients in large bowl.

    Add milk and egg and stir.

    Pour in hot oil and stir quickly.

    Add chilies, corn and cheese and mix well.

    Pour into hot skillet and bake 20 minutes.
