Mexican Corn Bread

Ingredients

  • 1 c. yellow corn meal
  • 2 eggs, well beaten
  • 1 c. sweet milk
  • 1/2 tsp. soda
  • 3/4 tsp. salt
  • 1 (No. 303) can cream-style corn
  • 1/2 c. oil
  • 1/4 lb. ground meat
  • 1 large onion
  • 1/4 lb. rat trap cheese, grated
  • 2 jalapeno peppers (large)

Directions

    Cook ground meat until done; drain well on paper towels.

    Add onion and peppers.

    Cook until tender.

    Grease a large iron skillet and sprinkle with meal.

    Bake in oven until brown.

    Mix first 7 ingredients together.

    Pour about 1/2 corn mixture in pan, then put layer of cheese, hamburger mixture and rest of cheese.

    Then top with rest of batter.

    Bake at 350° for 45 to 50 minutes.
