Ingredients

  • 1 c. yellow corn meal
  • 1/3 c. flour
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 2 eggs, beaten
  • 1 c. buttermilk
  • 1/2 c. vegetable oil
  • 1 (8 3/4 oz.) can cream-style corn
  • 1/3 c. chopped onion
  • 2 Tbsp. chopped green pepper
  • 1/2 c. shredded Cheddar cheese

Directions

    In a mixing bowl, combine corn meal, flour, sugar, salt, baking powder and baking soda.

    Combine remaining ingredients and then add to the dry ingredients.

    Stir only until moistened.

    Pour into a greased 9 x 9-inch baking pan or 10-inch heavy skillet. Bake at 350° for 30 to 35 minutes, or until bread is golden brown and when toothpick in center comes out clean.
