Mexican Corn Bread

Ingredients

  • 2 c. cornmeal
  • 3/4 c. flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. sugar
  • 2/3 c. liquid oil
  • 3 eggs, beaten
  • 1 can cream-style corn
  • 1 c. sour cream (or 1 c. milk plus 1 Tbsp. vinegar)
  • 1 (4 oz.) can mild, chopped green chilies
  • 1 onion, chopped (optional)
  • 1 c. cheese, grated (I use Cheddar)

Directions

    Mix cornmeal, flour, baking powder, salt and sugar together in a large bowl.

    Mix the remaining ingredients, except cheese, together and add to the dry ingredients.

    Pour half of the batter into a 13 x 9-inch pan.

    Sprinkle the grated cheese over the batter and cover with the remaining batter.

    Bake at 450° for 30 minutes.

    Serves 10 to 12.
