Mexican Corn Bread

Ingredients
- 2 c. cornmeal
- 3/4 c. flour
- 3 tsp. baking powder
- 1 tsp. salt
- 1 tsp. sugar
- 2/3 c. liquid oil
- 3 eggs, beaten
- 1 can cream-style corn
- 1 c. sour cream (or 1 c. milk plus 1 Tbsp. vinegar)
- 1 (4 oz.) can mild, chopped green chilies
- 1 onion, chopped (optional)
- 1 c. cheese, grated (I use Cheddar)
Directions

1Mix cornmeal, flour, baking powder, salt and sugar together in a large bowl.

2Mix the remaining ingredients, except cheese, together and add to the dry ingredients.

3Pour half of the batter into a 13 x 9-inch pan.

4Sprinkle the grated cheese over the batter and cover with the remaining batter.

5Bake at 450° for 30 minutes.

6Serves 10 to 12.
