Ingredients

  • 2 c. corn meal (white)
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1 medium onion, chopped fine
  • 4 or 5 hot peppers, chopped
  • 1 large bell pepper, chopped
  • 1/2 c. flour
  • 3 eggs
  • 1 1/2 c. buttermilk
  • 1 can creamed corn
  • 2/3 c. Wesson oil
  • 1 tsp. sugar
  • 2 c. grated cheese

Directions

    Mix all ingredients except cheese in a large bowl.

    If batter is stiff, use hot water to make it beatable.

    Pour into very hot greased pan.

    Pour half batter in, sprinkle cheese on top, then rest of batter.

    Bake at 450° until browned.
