  • 1 c. plain corn meal
  • 1/2 tsp. salt
  • 1/2 tsp. soda
  • 2 eggs
  • 2/3 c. buttermilk
  • 1/3 c. shortening
  • 1 c. cream-style kernel corn
  • 1 c. grated cheese
  • 1 small can green chili peppers, drained and chopped

Directions

    Mix dry ingredients.

    Add these ingredients to the corn meal mixture and pour over half of the combined mixture into a hot skillet.

    Sprinkle cheese and chili peppers over the mixture. Pour remaining mixture over it and bake in 375° oven for 30 to 40 minutes.
