  • 1 1/2 c. self-rising corn meal
  • 1/4 c. self-rising flour
  • 1 can cream-style corn
  • 1 can Niblets corn, drained
  • 2 eggs, beaten
  • 1 Tbsp. sugar
  • 1 tsp. soda
  • 1 c. buttermilk
  • 1/2 c. salad oil
  • 1 medium green sweet pepper
  • 1 medium onion, chopped
  • 2 c. grated cheese
  • 3 Tbsp. hot pepper

    Preheat oven.

    Pour salad oil into skillet, heat until hot. Mix all ingredients together, except cheese.

    Pour half the mix into pan or skillet.

    Sprinkle with half (1 cup) cheese.

    Pour in rest of bread mix and add other cup of cheese on top.

    Bake at 370° for 35 minutes or until fork comes out easily.
