Mexican Corn Bread

  • 1/2 lb. ground meat
  • 1/2 lb. grated cheese (any kind of yellow cheese)
  • 1 c. yellow corn meal
  • 1 c. milk
  • 4 fresh jalapeno peppers, chopped fine or out of jar
  • 1 large onion, chopped
  • 1/2 tsp. baking soda
  • 1 or 2 cans yellow creamed corn
  • 1/2 tsp. salt

Directions

    Brown meat and onion; set aside.

    Grate cheese; set aside. Combine corn meal, soda, milk, corn, salt and peppers.

    Heat a large, deep skillet.

    Grease and sprinkle corn meal over bottom of skillet.

    Put in half of batter, then layer meat mixture and grated cheese, then add remaining batter.

    Bake at 350° for 45 to 50 minutes.
