  • 3 c. self-rising meal
  • 1 1/2 c. grated sharp cheese
  • 3 eggs
  • 1 3/4 c. buttermilk or 1 1/2 c. sweet milk
  • 1 large onion, chopped
  • 2 Mexican hot peppers, chopped
  • 3/4 c. cream-style corn
  • 1 Tbsp. sugar
  • 1/2 c. cooking oil
  • 1 (2 oz.) jar pimentos

    Mix as you would corn bread. Pour into a preheated, well oiled, heavy Bundt pan or large, heavy skillet. Preheat utensil to 425° before oiling and bake about 45 minutes or until well browned. (Heat pan before oiling.)
