Mexican Corn Salad

  • 2 tablespoons vegetable oil
  • 5 ears corn
  • 1 teaspoon salt
  • 2 tablespoons mayonnaise or 2 tablespoons Mexican crema
  • 3 ounces feta cheese or 3 ounces Cotija cheese, crumbled
  • 1/2 cup scallion, sliced
  • 1/2 cup cilantro, chopped
  • 1 jalapeno, seeded & diced
  • 2 garlic cloves, minced
  • juice of one lime
  • 1/2 teaspoon chili powder

    Cut corn off cob.

    In a cast iron pan, heat oil over hight heat. Add corn. Season with salt. Cook for about 15 minutes until corn starts to brown.

    Transfer corn to bowl and mix with mayo/crema, feta/cojita, scallions, cilantro, jalapeno, garlic, lime juice & chili powder. Season with salt if desired.

    Can be served hot or cold.
